Woodford Reserve, formerly Labrot & Graham, is located in Versailles, Kentucky, where the water is very calcareous and brings a unique style to this bourbon. The distillery dates back to at least 1812, and its aging cellars, built-in stone, which is unique in Kentucky, are over a century old.
Woodford Reserve differs from other distilleries because the fermentation tanks, the first stage of development, are made of cypress, not pine, as usual, a wood chosen for its neutrality in the processing of corn, rye and malted barley. The other point of singularization is stilled, indeed, it is sufficiently specific to mention it, Woodford Reserve practices triple distillation, as in Ireland, in three pot stills, Scottish pot stills, different in copper, from Scotland, with a capacity of 9,500 liters.
Aging in burnt barrels is carried out, after reduction, in stone cellars that maintain a constant temperature. The Woodford Reserve is the official bourbon of the Kentucky Derby and the Breeder's Cup. This brand belongs to the Brown Foreman group, which also owns Early Times.
Nose: Rich aromas of cinnamon and nutmeg, with fresh mint running underneath. Then cookie dough, brioche and honey, along with apricots and sultanas, a touch of vanilla and candied citrus peel.
Palate: Great balance between sweet fruit, toasty oak and warm spices. Juicy sultanas, cinnamon-dusted pastries and Demerara sugar freshened up with mint and caraway seed. Deliciously soft mouthfeel.
Finish: The soft dried fruit and sweet spice linger in harmony.
