Dom Pierre Perignon set out his vision to "create the best wine in the world" when he became Cellar Master at the sacred Abbey of Hautvillers in 1668. Over 40 years of dedication to this mission led to him being seen by many as the 'father of champagne', due to his visionary spirit and exceptional daring approach to the winemaking process - in which he effectively laid down the fundamental rules in the method champenoise. A favored wine of the Sun King Louis XIV, Dom Perignon himself compared his wine to "drinking stars".
It is to René Geoffroy, the Cellar Master of Dom Perignon that we can associate these words: "each vintage of Don Perignon is a unique piece"
If the proportion in terms of grape variety remains a secret, on the other hand, it is a Pinot Noir and Chardonnay blend from the year 2000 from 7 Grands Crus of Champagne.
Shiny Bronze-Gold.
The nose is floral with a wide range of fragrances from white flowers to spices of gray pepper and a touch of bread and toasted sweet almond.
Very nice freshness and a lot of finesse but also very complex with a slightly spicy finish. Lots of roundness surrounded by a slightly saline touch.
